Pistachio-Crusted Feta Bites with Blackberry Honey Glaze

Ingredients

For the Feta Bites:

  • 200 g feta cheese, cut into cubes
  • ½ cup (60 g) pistachios, finely crushed
  • ¼ cup (30 g) all-purpose flour
  • 1 egg, beaten
  • ½ tsp black pepper
  • 2 tbsp olive oil (for frying)

For the Blackberry Honey Glaze:

  • 1 cup fresh or frozen blackberries
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 1–2 tbsp water (as needed)
  • Pinch of salt

Instructions

1. Prepare the coating

Set up three bowls:

  • Bowl 1: flour mixed with black pepper
  • Bowl 2: beaten egg
  • Bowl 3: crushed pistachios

2. Coat the feta

  • Dip each feta cube first in flour
  • Then in the beaten egg
  • Finally roll it in the crushed pistachios until fully coated
  • Repeat until all pieces are covered

3. Fry the feta bites

  • Heat olive oil in a pan over medium heat
  • Fry the feta cubes for about 1–2 minutes per side, until golden and crispy
  • Remove and place on paper towels to drain excess oil

4. Make the blackberry honey glaze

  • In a small saucepan, add blackberries, honey, lemon juice, and a pinch of salt
  • Cook over medium heat for 5–7 minutes, stirring and gently mashing the berries
  • Add a little water if the sauce becomes too thick
  • Simmer until it turns glossy and slightly syrupy
  • Strain if you want a smooth glaze (optional)

5. Serve

  • Drizzle the warm blackberry honey glaze over the crispy pistachio feta bites
  • Serve immediately as an appetizer or snack
