Pistachio-Crusted Feta Bites with Blackberry Honey Glaze
Ingredients
For the Feta Bites:
- 200 g feta cheese, cut into cubes
- ½ cup (60 g) pistachios, finely crushed
- ¼ cup (30 g) all-purpose flour
- 1 egg, beaten
- ½ tsp black pepper
- 2 tbsp olive oil (for frying)
For the Blackberry Honey Glaze:
- 1 cup fresh or frozen blackberries
- 2 tbsp honey
- 1 tbsp lemon juice
- 1–2 tbsp water (as needed)
- Pinch of salt
Instructions
1. Prepare the coating
Set up three bowls:
- Bowl 1: flour mixed with black pepper
- Bowl 2: beaten egg
- Bowl 3: crushed pistachios
2. Coat the feta
- Dip each feta cube first in flour
- Then in the beaten egg
- Finally roll it in the crushed pistachios until fully coated
- Repeat until all pieces are covered
3. Fry the feta bites
- Heat olive oil in a pan over medium heat
- Fry the feta cubes for about 1–2 minutes per side, until golden and crispy
- Remove and place on paper towels to drain excess oil
4. Make the blackberry honey glaze
- In a small saucepan, add blackberries, honey, lemon juice, and a pinch of salt
- Cook over medium heat for 5–7 minutes, stirring and gently mashing the berries
- Add a little water if the sauce becomes too thick
- Simmer until it turns glossy and slightly syrupy
- Strain if you want a smooth glaze (optional)
5. Serve
- Drizzle the warm blackberry honey glaze over the crispy pistachio feta bites
- Serve immediately as an appetizer or snack
