Creamy Garlic Mushroom Orzo
This dish is silky, buttery, and packed with deep garlic flavor and golden mushrooms. The orzo cooks risotto-style, soaking up all the creamy goodness while staying tender and slightly chewy. It’s simple, elegant, and ready in about 30 minutes.
Ingredients
- 1 cup orzo pasta
- 2 tbsp olive oil or butter
- 1 tbsp butter (optional but recommended for richness)
- 1 small onion, finely chopped
- 4 cloves garlic, minced
- 250g mushrooms (cremini, button, or mixed), sliced
- 3 cups chicken or vegetable broth (warm)
- 1/2 cup heavy cream (or cooking cream)
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- 1/2 tsp dried thyme (or Italian seasoning)
- Fresh parsley for garnish (optional)
Instructions
1. Sauté the mushrooms
Heat olive oil (and butter if using) in a large pan over medium heat.
Add the sliced mushrooms and cook for 6–8 minutes until golden brown and their moisture has mostly evaporated.
2. Build the flavor base
Add the chopped onion and cook for 2–3 minutes until soft.
Stir in the garlic and cook for about 30 seconds until fragrant.
3. Toast the orzo
Add the orzo directly into the pan and stir for 1–2 minutes so it lightly toasts and absorbs the flavors.
4. Cook it creamy-style
Pour in the warm broth one ladle at a time, stirring often—like risotto.
Let the orzo absorb the liquid before adding more. Continue until the orzo is tender (about 10–12 minutes).
5. Make it creamy
Lower the heat and stir in the cream, Parmesan cheese, thyme, salt, and pepper.
Mix until everything becomes smooth, creamy, and slightly thick.
6. Finish & serve
Taste and adjust seasoning.
Top with fresh parsley and extra Parmesan if you like.
Tips & Variations
- Add spinach at the end for extra color and nutrition
- Mix in grilled chicken or shrimp for a full meal
- Use a splash of white wine when cooking mushrooms for deeper flavor
