Southern-Style Potato Salad

 Ingredients

  • 1.5 kg (about 3 lbs) potatoes (russet or Yukon Gold), peeled & cubed
  • 4–5 hard-boiled eggs, chopped
  • 1 cup mayonnaise
  • 2–3 tbsp yellow mustard
  • 2 tbsp apple cider vinegar
  • 3 tbsp sweet pickle relish
  • 2 celery stalks, finely chopped
  • ½ small onion, finely chopped
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt & black pepper to taste
  • Paprika (for garnish)

These ingredients are typical of Southern-style recipes, which combine mayo + mustard + eggs + relish for that signature flavor

 Instructions

  1. Cook the potatoes
    • Put potatoes in a large pot, cover with salted water.
    • Boil 15–20 minutes until fork-tender, then drain.
  2. Cool & season
    • While still warm, toss potatoes with vinegar and mustard.
    • Let them cool completely.
  3. Prepare the mix
    • In a bowl, combine mayonnaise, relish, garlic powder, onion powder, salt, and pepper.
  4. Combine everything
    • Add potatoes, eggs, celery, and onion.
    • Mix gently until creamy and well coated.
  5. Chill & serve
    • Sprinkle paprika on top.
    • Refrigerate at least 30 minutes before serving.

 Tips for best results

  • Slightly mash some potatoes for a creamier texture
  • Chill longer (1–2 hours) for better flavor
  • Mustard is key for that authentic Southern taste
