Seed & Nut No-Flour Bread

 Ingredients

  • 150 g sunflower seeds
  • 120 g flax seeds
  • 60 g pumpkin seeds
  • 60 g chia seeds
  • 30 g almonds (chopped)
  • 30 g psyllium husk powder
  • 1 tsp salt
  • 2 tbsp tahini
  • 1 tsp lemon juice
  • 300 ml water

 Instructions

  1. Mix dry ingredients
    In a large bowl, combine all seeds, almonds, psyllium husk, and salt.
  2. Add wet ingredients
    Pour in water, tahini, and lemon juice. Mix well until everything is evenly combined.
  3. Let it rest
    Leave the mixture for about 10–15 minutes so it thickens (psyllium absorbs water and binds everything).
  4. Shape the loaf
    Transfer the mixture into a lined loaf pan and press it down firmly.
  5. Bake
    Bake at 180°C (350°F) for about 45–60 minutes until firm and golden.
  6. Cool completely
    Let the bread cool fully before slicing (very important for texture).

Tips

  • This bread is dense, nutty, and very filling (not like soft white bread).
  • Perfect for keto, gluten-free, and healthy diets
  • Store in the fridge or freeze slices for later
