Crispy Cheesy Herb Bites with Creamy Dip
Ingredients
For the cheesy herb bites:
- 3 medium potatoes (boiled & mashed)
- 1 cup shredded cheddar cheese
- 2 tbsp flour (or cornstarch)
- 1 tsp garlic powder
- 1 tsp paprika
- Salt & black pepper (to taste)
- Oil for frying
For the creamy herb dip:
- ½ cup sour cream
- 1 tbsp mayonnaise (optional for extra creaminess)
- 1 tbsp fresh dill (chopped)
- 1 tsp lemon juice
- 1 tsp mixed dried herbs or parsley
- Salt (to taste)
Instructions
1. Make the cheesy mixture
In a bowl, mix mashed potatoes, cheddar cheese, flour, garlic powder, paprika, salt, and pepper until it becomes a soft dough.
2. Shape the bites
Roll the mixture into small bite-sized balls or mini patties.
Chill them in the fridge or freezer for about 15 minutes so they firm up.
3. Fry until crispy
Heat oil in a pan over medium heat.
Fry the bites until they are golden brown and crispy on the outside.
Place on paper towels to drain excess oil.
Creamy Herb Dip
4. Mix the dip
In a small bowl, combine:
- sour cream
- mayonnaise
- dill
- lemon juice
- herbs
- salt
Stir until smooth and creamy.
Serve
Serve the crispy cheesy bites hot with the cool creamy herb dip on the side.
Tips
- Add mozzarella for extra meltiness
- Bake instead of frying for a lighter version (200°C for 20–25 min)
- Chill well before frying for best crisp texture
