Honey BBQ Chicken Rice
The 20-Minute Comfort Dinner
Ingredients
- 1.5 lbs chicken breast, cut into bite-sized pieces
- 3 cups cooked white rice (leftover rice works best)
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tablespoon soy sauce
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- Fresh scallions, for garnish
- Sesame seeds, for garnish
Sear the Chicken
Heat the olive oil in a large skillet over medium-high heat.
Season the chicken with salt and black pepper, then cook for 6–8 minutes until golden brown and fully cooked.
Add Garlic
Add the minced garlic to the skillet and cook for about 1 minute until fragrant.
Prepare the Sauce
In a small bowl, whisk together:
- BBQ sauce
- Honey
- Soy sauce
Pour the sauce over the chicken in the skillet.
Simmer & Glaze
Let the sauce simmer for 2 minutes until it thickens and coats the chicken nicely.
Add the Rice
Add the cooked rice directly into the skillet.
Gently toss everything together for 1–2 minutes until heated through and well combined.
Serve
Garnish with:
- Fresh scallions
- Sesame seeds
