 Baked Buffalo Chicken Taquitos

 Ingredients

  • 2 cups cooked chicken, shredded
  • 4 oz cream cheese, softened
  • 1/3 cup buffalo wing sauce (adjust to taste)

 Extras

  • 1 cup shredded cheddar or mozzarella cheese
  • 2 tbsp green onions, chopped (optional)

 For rolling

  • 10–12 small flour or corn tortillas

 For baking

  • Cooking spray or 1–2 tbsp olive oil

 Optional dipping sauces

  • Ranch dressing
  • Blue cheese dressing

 Instructions

1. Preheat oven

  • Preheat to 400°F (200°C)
  • Line a baking sheet with parchment paper

2. Make the filling

  • In a bowl, mix: shredded chicken + cream cheese + buffalo sauce
  • Stir until creamy and well combined
  • Fold in shredded cheese and green onions

3. Prepare tortillas

  • Warm tortillas slightly (microwave ~20 seconds) so they don’t crack

4. Roll taquitos

  • Add 2–3 tablespoons of filling to each tortilla
  • Roll tightly and place seam-side down on the baking sheet

5. Bake

  • Lightly spray or brush with oil
  • Bake for 15–20 minutes until crispy and golden

6. Serve

  • Let cool for a few minutes
  • Serve with ranch or blue cheese for dipping

 Tips

  • For extra crispiness, flip halfway through baking
  • Want it spicier? Add extra buffalo sauce or a pinch of chili flakes
  • You can also air-fry at 380°F (190°C) for 10–12 minutes
