Baked Buffalo Chicken Taquitos
Ingredients
- 2 cups cooked chicken, shredded
- 4 oz cream cheese, softened
- 1/3 cup buffalo wing sauce (adjust to taste)
Extras
- 1 cup shredded cheddar or mozzarella cheese
- 2 tbsp green onions, chopped (optional)
For rolling
- 10–12 small flour or corn tortillas
For baking
- Cooking spray or 1–2 tbsp olive oil
Optional dipping sauces
- Ranch dressing
- Blue cheese dressing
Instructions
1. Preheat oven
- Preheat to 400°F (200°C)
- Line a baking sheet with parchment paper
2. Make the filling
- In a bowl, mix: shredded chicken + cream cheese + buffalo sauce
- Stir until creamy and well combined
- Fold in shredded cheese and green onions
3. Prepare tortillas
- Warm tortillas slightly (microwave ~20 seconds) so they don’t crack
4. Roll taquitos
- Add 2–3 tablespoons of filling to each tortilla
- Roll tightly and place seam-side down on the baking sheet
5. Bake
- Lightly spray or brush with oil
- Bake for 15–20 minutes until crispy and golden
6. Serve
- Let cool for a few minutes
- Serve with ranch or blue cheese for dipping
Tips
- For extra crispiness, flip halfway through baking
- Want it spicier? Add extra buffalo sauce or a pinch of chili flakes
- You can also air-fry at 380°F (190°C) for 10–12 minutes
