Crunchy Cucumber with Chili and Herbs
Ingredients:
- 3 large cucumbers, sliced or cut into bite-sized pieces
- 2 garlic cloves, minced
- 1 teaspoon chili flakes (adjust to taste)
- 2 tablespoons vinegar (white or rice vinegar)
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 2 tablespoons olive oil (or any neutral oil)
- Salt, to taste
- A handful of fresh cilantro or parsley, chopped
- Sesame seeds (optional)
Instructions:
- Prepare the cucumbers
Place the sliced cucumbers in a colander, sprinkle with a little salt, and let them sit for about 10 minutes to release excess water. Pat them dry. - Make the dressing
In a small bowl, mix together: garlic, chili flakes, soy sauce, vinegar, sugar, and oil. Stir well until the sugar dissolves. - Combine
Add the cucumbers to a bowl and pour the dressing over them. Toss well to coat. - Add finishing touches
Sprinkle chopped herbs and sesame seeds on top. - Chill (optional but recommended)
Refrigerate for 15–30 minutes to let the flavors blend.
Tips:
- Add a squeeze of lemon juice for extra freshness
- A drizzle of sesame oil gives a deeper flavor
- Best served cold as a refreshing side dish or light snack
