Spicy Carrot Salad in Jars No Cooking Needed

Ingredients:

  • 1 kg (about 2.2 lbs) grated carrots
  • 1 red bell pepper, finely sliced or grated
  • 3 cloves garlic, minced
  • 1/2 cup fresh parsley and cilantro, chopped
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon black pepper
  • Chili flakes or fresh chili (to taste)
  • 1/4 cup olive oil
  • 1/4 cup vinegar
  • Juice of 1 lemon
  • Salt to taste

 Instructions:

  1. In a large bowl, add the grated carrots and red pepper.
  2. Add the garlic, parsley, and cilantro.
  3. Sprinkle in all the spices (paprika, cumin, black pepper, chili, and salt).
  4. Pour in the olive oil, vinegar, and lemon juice.
  5. Mix everything very well until the carrots are fully coated.
  6. Pack the mixture into clean glass jars and seal tightly.
  7. Refrigerate for at least 4–6 hours (overnight is best) to let the flavors develop.

 Tips:

  • Tastes even better the next day!
  • Perfect as a side dish with grilled meat or bread.
  • Keeps in the fridge for up to a week.
