Spicy Carrot Salad in Jars No Cooking Needed
Ingredients:
- 1 kg (about 2.2 lbs) grated carrots
- 1 red bell pepper, finely sliced or grated
- 3 cloves garlic, minced
- 1/2 cup fresh parsley and cilantro, chopped
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon black pepper
- Chili flakes or fresh chili (to taste)
- 1/4 cup olive oil
- 1/4 cup vinegar
- Juice of 1 lemon
- Salt to taste
Instructions:
- In a large bowl, add the grated carrots and red pepper.
- Add the garlic, parsley, and cilantro.
- Sprinkle in all the spices (paprika, cumin, black pepper, chili, and salt).
- Pour in the olive oil, vinegar, and lemon juice.
- Mix everything very well until the carrots are fully coated.
- Pack the mixture into clean glass jars and seal tightly.
- Refrigerate for at least 4–6 hours (overnight is best) to let the flavors develop.
Tips:
- Tastes even better the next day!
- Perfect as a side dish with grilled meat or bread.
- Keeps in the fridge for up to a week.
