Garlic Butter Beef Bites with Creamy Mashed Potatoes
Tender steak cubes in rich garlic butter, served over fluffy mashed potatoes — pure comfort food!
Ingredients
For the Beef Bites:
- 1 lb (450g) beef steak (sirloin or ribeye), cut into bite-sized pieces
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tsp fresh thyme (or ½ tsp dried)
- 1 tsp fresh rosemary (optional)
- Salt and black pepper, to taste
For the Creamy Mashed Potatoes:
- 2 lbs (900g) potatoes, peeled and cubed
- ½ cup milk (warm)
- ¼ cup butter
- Salt and pepper, to taste
- Optional: ¼ cup sour cream for extra creaminess
Instructions
1. Prepare the Mashed Potatoes:
- Place potatoes in a large pot and cover with salted water.
- Bring to a boil and cook for 15–20 minutes, until fork-tender.
- Drain and mash the potatoes.
- Add butter, warm milk, salt, and pepper.
- Mix until smooth and creamy. (Add sour cream if using.)
- Cover and keep warm.
2. Cook the Beef Bites:
- Pat the beef pieces dry and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add beef in a single layer (don’t overcrowd the pan).
- Sear for 2–3 minutes per side until browned.
- Reduce heat to medium, add butter, garlic, thyme, and rosemary.
- Stir and spoon the garlic butter over the beef for 1–2 minutes.
- Remove from heat once cooked to your liking.
Serving:
- Spoon creamy mashed potatoes onto a plate.
- Top with garlic butter beef bites.
- Drizzle extra garlic butter from the pan over everything.
Tips:
- Don’t overcook the beef — it stays juicier when slightly pink inside.
- Use Yukon Gold potatoes for extra creamy mash.
- Add parsley on top for freshness and color.
