 Ingredients

For the Beef Bites:

  • 1 lb (450g) beef steak (sirloin or ribeye), cut into bite-sized pieces
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 tsp fresh rosemary (optional)
  • Salt and black pepper, to taste

For the Creamy Mashed Potatoes:

  • 2 lbs (900g) potatoes, peeled and cubed
  • ½ cup milk (warm)
  • ¼ cup butter
  • Salt and pepper, to taste
  • Optional: ¼ cup sour cream for extra creaminess

 Instructions

1. Prepare the Mashed Potatoes:

  1. Place potatoes in a large pot and cover with salted water.
  2. Bring to a boil and cook for 15–20 minutes, until fork-tender.
  3. Drain and mash the potatoes.
  4. Add butter, warm milk, salt, and pepper.
  5. Mix until smooth and creamy. (Add sour cream if using.)
  6. Cover and keep warm.

2. Cook the Beef Bites:

  1. Pat the beef pieces dry and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add beef in a single layer (don’t overcrowd the pan).
  4. Sear for 2–3 minutes per side until browned.
  5. Reduce heat to medium, add butter, garlic, thyme, and rosemary.
  6. Stir and spoon the garlic butter over the beef for 1–2 minutes.
  7. Remove from heat once cooked to your liking.

Serving:

  • Spoon creamy mashed potatoes onto a plate.
  • Top with garlic butter beef bites.
  • Drizzle extra garlic butter from the pan over everything.

 Tips:

  • Don’t overcook the beef — it stays juicier when slightly pink inside.
  • Use Yukon Gold potatoes for extra creamy mash.
  • Add parsley on top for freshness and color.
