Poor Man’s Meal Simple Rice & Beans Recipe

Ingredients
- 1 cup dried beans (kidney, white, or black beans)
- 1 cup white rice
- 1 medium onion, finely chopped
- 2 cloves garlic, minced (optional)
- 2 tablespoons olive oil
- 1 teaspoon paprika or cumin (optional)
- Salt, to taste
- Black pepper, to taste
- 3–4 cups water
Instructions
1. Prepare the Beans
- Soak the dried beans in water overnight.
- Drain and rinse them before cooking.
2. Cook the Beans
- Place beans in a pot with fresh water.
- Boil, then simmer for 45–60 minutes until tender.
- Add a pinch of salt near the end.
3. Cook the Rice
- Rinse the rice well.
- Cook it in 2 cups of water until soft and fluffy (about 15–20 minutes).
4. Make the Flavor Base
- Heat olive oil in a pan.
- Add chopped onion and cook until golden.
- Add garlic and spices, stir for 1 minute.
5. Combine Everything
- Add cooked beans to the onion mixture.
- Stir well and let simmer for 5–10 minutes.
- Season with salt and pepper.
6. Serve
- Serve the beans over rice or mix them together.
- Enjoy hot
Tips
- You can add vegetables like carrots or peppers for more flavor.
- For extra protein, add eggs or a bit of meat if available.
