Poor Man’s Meal Simple Rice & Beans Recipe

A simple, budget-friendly comfort meal made with rice and beans. This dish is hearty, filling, and perfect for tough times when you need something cheap but satisfying.

 Ingredients

  • 1 cup dried beans (kidney, white, or black beans)
  • 1 cup white rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced (optional)
  • 2 tablespoons olive oil
  • 1 teaspoon paprika or cumin (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 3–4 cups water

 Instructions

1. Prepare the Beans

  • Soak the dried beans in water overnight.
  • Drain and rinse them before cooking.

2. Cook the Beans

  • Place beans in a pot with fresh water.
  • Boil, then simmer for 45–60 minutes until tender.
  • Add a pinch of salt near the end.

3. Cook the Rice

  • Rinse the rice well.
  • Cook it in 2 cups of water until soft and fluffy (about 15–20 minutes).

4. Make the Flavor Base

  • Heat olive oil in a pan.
  • Add chopped onion and cook until golden.
  • Add garlic and spices, stir for 1 minute.

5. Combine Everything

  • Add cooked beans to the onion mixture.
  • Stir well and let simmer for 5–10 minutes.
  • Season with salt and pepper.

6. Serve

  • Serve the beans over rice or mix them together.
  • Enjoy hot

  • You can add vegetables like carrots or peppers for more flavor.
  • For extra protein, add eggs or a bit of meat if available.
  • This dish tastes even better the next day!
