Golden Crispy Chicken with Parmesan Mushroom Sauce
Ingredients
Chicken:
- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (preferably panko)
- 1/2 cup grated Parmesan cheese
- Salt & black pepper (to taste)
- 1 tsp garlic powder
- 1 tsp paprika
- Oil for frying (vegetable or olive oil)
Parmesan Mushroom Sauce:
- 2 tbsp butter
- 1 tbsp olive oil
- 8 oz (225g) mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup chicken broth
- Salt & pepper (to taste)
- 1/2 tsp Italian seasoning
- Fresh parsley (optional, for garnish)
Instructions
1. Prepare the chicken:
- Season chicken breasts with salt, pepper, garlic powder, and paprika.
- Set up 3 bowls:
- Flour in the first
- Beaten eggs in the second
- Breadcrumbs mixed with Parmesan in the third
- Dredge each chicken breast in flour → egg → breadcrumb mixture. Press well to coat.
2. Cook the chicken:
- Heat oil in a large pan over medium heat.
- Fry chicken for 4–5 minutes per side until golden and crispy.
- Remove and place on paper towels to drain.
3. Make the Parmesan mushroom sauce:
- In the same pan, melt butter with olive oil.
- Add mushrooms and cook until browned (about 5–7 minutes).
- Add garlic and cook for 30 seconds.
- Pour in chicken broth and let it simmer for 2–3 minutes.
- Add heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper.
- Stir until sauce becomes thick and creamy.
4. Serve:
- Place crispy chicken on a plate and pour warm Parmesan mushroom sauce on top.
- Garnish with fresh parsley if desired.
