Creamy Mexican Street Corn Cup

Sweet, slightly charred corn tossed in a creamy, tangy, cheesy sauce with bold street-style flavors. Perfect as a snack, side dish, or party cup!
Ingredients
- 4 cups corn kernels (fresh, grilled, or thawed frozen)
- 3 tbsp butter
- 3 tbsp mayonnaise
- 1/2 cup Mexican crema or sour cream
- 1/2 cup crumbled cotija cheese (or feta as a substitute)
- 1/2 tsp chili powder (or to taste)
- 1/2 tsp smoked paprika (optional)
- 1–2 cloves garlic, minced
- Juice of 1 lime
- 1/4 cup chopped fresh cilantro
- Salt and black pepper, to taste
- Extra cheese, chili powder, and lime wedges for garnish
Instructions
- Cook the corn:
Heat a large pan over medium-high heat. Add butter and let it melt. Add the corn and cook for 5–7 minutes until slightly charred and golden. - Add garlic:
Stir in the minced garlic and cook for about 1 minute until fragrant. - Make it creamy:
Reduce heat to low. Add mayonnaise and crema (or sour cream), stirring well to coat the corn evenly. - Add flavor:
Mix in chili powder, smoked paprika (if using), lime juice, salt, and pepper. - Add cheese & herbs:
Stir in the crumbled cotija cheese and chopped cilantro. Mix until everything is creamy and combined. - Serve:
Spoon into cups and top with extra cheese, chili powder, and a squeeze of lime.
