Creamy Mexican Street Corn Cup

Description:
Sweet, slightly charred corn tossed in a creamy, tangy, cheesy sauce with bold street-style flavors. Perfect as a snack, side dish, or party cup!

 Ingredients

  • 4 cups corn kernels (fresh, grilled, or thawed frozen)
  • 3 tbsp butter
  • 3 tbsp mayonnaise
  • 1/2 cup Mexican crema or sour cream
  • 1/2 cup crumbled cotija cheese (or feta as a substitute)
  • 1/2 tsp chili powder (or to taste)
  • 1/2 tsp smoked paprika (optional)
  • 1–2 cloves garlic, minced
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro
  • Salt and black pepper, to taste
  • Extra cheese, chili powder, and lime wedges for garnish

 Instructions

  1. Cook the corn:
    Heat a large pan over medium-high heat. Add butter and let it melt. Add the corn and cook for 5–7 minutes until slightly charred and golden.
  2. Add garlic:
    Stir in the minced garlic and cook for about 1 minute until fragrant.
  3. Make it creamy:
    Reduce heat to low. Add mayonnaise and crema (or sour cream), stirring well to coat the corn evenly.
  4. Add flavor:
    Mix in chili powder, smoked paprika (if using), lime juice, salt, and pepper.
  5. Add cheese & herbs:
    Stir in the crumbled cotija cheese and chopped cilantro. Mix until everything is creamy and combined.
  6. Serve:
    Spoon into cups and top with extra cheese, chili powder, and a squeeze of lime.

 Tips

  • Grill the corn first for extra smoky flavor
  • Adjust spice level with hot sauce or cayenne
  • Serve warm for best taste
