Monster Cookie Dough Bites
Ingredients (Makes ~20–25 bites)
- ¾ cup chunky peanut butter
- ¼ cup butter, softened
- ½ tsp vanilla extract
- 1 tbsp maple syrup
- ½ tsp baking soda (optional — adds that “dough” flavor)
- ¾ cup light brown sugar, packed
- 1 cup quick-cooking oatmeal
- ½ cup mini chocolate chips
- ½ cup mini M&M candies
Instructions
Cream the Butter and Peanut Butter
In a medium bowl, use a hand mixer or spoon to cream together:
- ¾ cup peanut butter
- ¼ cup softened butter
- ¾ cup brown sugar
- ½ tsp vanilla extract
- 1 tbsp maple syrup
Mix until smooth and creamy.
Add Oats & Baking Soda
- Stir in ½ tsp baking soda (if using).
- Gradually mix in 1 cup quick-cooking oatmeal until evenly combined.
Fold in the Candy
- Gently fold in:
- ½ cup mini chocolate chips
- ½ cup mini M&M candies
You can add more for extra chocolaty goodness!
Shape the Bites
- Using a small cookie scoop or tablespoon, scoop bite-sized portions.
- Roll each into a ball and place on a parchment-lined plate or tray.
Chill to Set
- Chill in the fridge for 30–60 minutes until firm.
- Optional: Freeze for 10–15 minutes for an extra firm bite.
Serving & Storage
- Store in an airtight container in the fridge for up to 1 week.
- Freeze for up to 2 months — grab one whenever the sweet tooth strikes!
Tips & Tricks
- For chewy, gooey bites, skip the baking soda.
- Swap peanut butter for almond butter if you like a different nutty flavor.
- Add a pinch of salt on top for a sweet-salty flavor bomb.
