Meatloaf Cupcakes with Whipped Potato Topping
Ingredients
For the Meatloaf:
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup ketchup
- 1/4 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
For the Topping:
- 2 cups mashed potatoes, whipped until smooth and creamy
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a muffin tin or line it with paper liners.
- Prepare the meat mixture
In a large bowl, combine the ground beef, breadcrumbs, egg, ketchup, milk, garlic powder, onion powder, salt, and pepper. Mix until just combined (do not overmix). - Form the cupcakes
Divide the mixture evenly and press it into the muffin tin cups, filling each about 3/4 full. - Bake
Place in the oven and bake for 20–25 minutes, or until the meat is fully cooked through. - Prepare the topping
While the meatloaf is baking, make sure your mashed potatoes are smooth and fluffy. You can add a little butter or milk for extra creaminess if desired. - Assemble
Remove the meatloaf cupcakes from the oven and let them cool slightly. Pipe or spoon the whipped mashed potatoes on top like frosting. - Optional finishing touch
Add a drizzle of ketchup or gravy on top for extra flavor.
