Garlic Butter Slow Cooker Potatoes
Description
Tender, flavorful potatoes slow-cooked in a rich garlic butter sauce. Perfect as an easy side dish for any meal.
Ingredients
- 1.5–2 lbs baby potatoes (red or Yukon gold), cut into chunks
- 4 tablespoons butter, melted
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika (optional)
- ½ teaspoon red pepper flakes (optional)
- 1 teaspoon dried parsley or Italian seasoning
- 2 tablespoons grated Parmesan cheese (optional)
Instructions
- Prep the potatoes
Wash and cut the potatoes into bite-sized chunks (leave skin on for extra flavor). - Make the garlic butter sauce
In a small bowl, mix melted butter, olive oil, minced garlic, salt, pepper, paprika, red pepper flakes, and herbs. - Combine
Place the potatoes in the slow cooker. Pour the garlic butter mixture over them and toss well to coat evenly. - Cook
- Cover and cook on LOW for 4–5 hours
- Or on HIGH for 2–3 hours
Stir once halfway through if possible.
- Finish
Once tender, sprinkle with Parmesan cheese and a little extra parsley if desired. - Serve
Serve warm as a side dish with chicken, steak, or grilled meals.
Tips
- For crispy edges, transfer cooked potatoes to a baking tray and broil for 5–7 minutes.
- You can add onions or carrots for extra flavor.
- Adjust garlic and spices to taste.
