Garlic Butter Slow Cooker Potatoes

Description

Tender, flavorful potatoes slow-cooked in a rich garlic butter sauce. Perfect as an easy side dish for any meal.

Ingredients

  • 1.5–2 lbs baby potatoes (red or Yukon gold), cut into chunks
  • 4 tablespoons butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika (optional)
  • ½ teaspoon red pepper flakes (optional)
  • 1 teaspoon dried parsley or Italian seasoning
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Prep the potatoes
    Wash and cut the potatoes into bite-sized chunks (leave skin on for extra flavor).
  2. Make the garlic butter sauce
    In a small bowl, mix melted butter, olive oil, minced garlic, salt, pepper, paprika, red pepper flakes, and herbs.
  3. Combine
    Place the potatoes in the slow cooker. Pour the garlic butter mixture over them and toss well to coat evenly.
  4. Cook
    • Cover and cook on LOW for 4–5 hours
    • Or on HIGH for 2–3 hours
      Stir once halfway through if possible.
  5. Finish
    Once tender, sprinkle with Parmesan cheese and a little extra parsley if desired.
  6. Serve
    Serve warm as a side dish with chicken, steak, or grilled meals.

Tips

  • For crispy edges, transfer cooked potatoes to a baking tray and broil for 5–7 minutes.
  • You can add onions or carrots for extra flavor.
  • Adjust garlic and spices to taste.
