Raw Zucchini White Parmigiana

 Raw Zucchini White Parmigiana Parmigiana Bianca di Zucchine

Ingredients:

  • 3–4 medium zucchini (thinly sliced lengthwise)
  • 150g ham (prosciutto or cooked ham)
  • 200g mozzarella cheese (sliced or shredded)
  • 50g grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 garlic clove (optional)
  • Salt & black pepper (to taste)
  • Fresh basil or parsley (optional)

 Instructions:

  1. Prepare the zucchini
    Wash and slice the zucchini into thin strips (using a knife or mandoline).
    Optional: Sprinkle a little salt and let them sit for 10 minutes, then pat dry (this removes excess water).
  2. Preheat the oven
    Set your oven to 180°C (350°F).
  3. Prepare the baking dish
    Lightly grease a baking dish with olive oil and rub it with garlic for extra flavor.
  4. Layer the ingredients
    • First layer: zucchini slices
    • Add ham
    • Add mozzarella
    • Sprinkle a bit of Parmesan
      Repeat the layers until everything is used, finishing with cheese on top.
  5. Season
    Add a drizzle of olive oil, black pepper, and a little salt if needed.
  6. Bake
    Bake for 30–35 minutes until golden and bubbly on top.
  7. Rest & serve
    Let it rest for 5–10 minutes before serving so it sets nicely.

 Tips:

  • You can add ricotta for extra creaminess
  • For a vegetarian version, skip the ham
  • Grill the zucchini first if you want a stronger flavor

Result: Creamy, cheesy, and super melty layers — simple but incredibly delicious!
