Poor Man’s Husband Casserole
A hearty, budget-friendly casserole that’s rich, filling, and perfect for busy weeknights. Simple ingredients, big comfort!
Ingredients:
- 1 lb ground beef (or ground turkey)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) tomato sauce
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 12 oz egg noodles
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning (optional)
Instructions:
- Cook the noodles
Bring a large pot of salted water to a boil and cook the egg noodles according to package directions. Drain and set aside. - Prepare the meat mixture
In a large skillet over medium heat, cook the ground beef and diced onion until the meat is browned and the onion is soft.
Add the garlic and cook for about 1 minute until fragrant. Drain excess grease. - Add sauce and seasoning
Stir in the tomato sauce, salt, pepper, and Italian seasoning. Let it simmer for 5 minutes. - Make the creamy layer
In a bowl, mix together the cream of mushroom soup and sour cream until smooth. - Assemble the casserole
Preheat your oven to 180°C (350°F).
In a greased baking dish:- Layer half of the cooked noodles
- Spread half of the sour cream mixture
- Add half of the meat mixture
- Sprinkle some cheese
Repeat the layers, finishing with cheese on top.
- Bake
Bake uncovered for 25–30 minutes, or until hot and bubbly and the cheese is melted and slightly golden.
Tips:
- Add vegetables like bell peppers or mushrooms for extra flavor.
- Swap cheddar for mozzarella for a stretchier texture.
- Let it rest 5–10 minutes before serving for cleaner slices.
