Mini Meatloaf Muffins

 Ingredients:

  • 1 lb (450g) ground beef (or ground turkey)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

 Glaze (optional but recommended):

  • 1/4 cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp mustard

 Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a muffin tin or line with paper cups.
  2. Mix ingredients
    In a large bowl, combine ground meat, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and paprika. Mix until just combined (don’t overmix).
  3. Fill the muffin tin
    Divide the mixture evenly into 10–12 muffin cups, pressing lightly to shape.
  4. Add glaze
    Mix glaze ingredients and spoon a little on top of each mini meatloaf.
  5. Bake
    Bake for 20–25 minutes, or until fully cooked (internal temp 160°F / 71°C).
  6. Rest & serve
    Let them cool for a few minutes before removing. Serve warm!

 Tips:

  • Add shredded cheese inside for a gooey center.
  • Swap beef for chicken or turkey for a lighter option.
  • Great with mashed potatoes or roasted veggies.
