 Chicken and Sausage Pasta Stir-Fry

A hearty, flavorful one-pan meal made with tender chicken, savory sausage, colorful vegetables, and pasta tossed in a delicious garlic-seasoned sauce. Perfect for a quick weeknight dinner!

Ingredients

  • 1 lb (450 g) boneless, skinless chicken breast, cut into bite-size pieces
  • 12 oz (340 g) smoked sausage, sliced
  • 12 oz (340 g) pasta, cooked and drained
  • 1 tbsp olive oil
  • 1 small onion, sliced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup sliced mushrooms
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 1/2 cup chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp butter
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the pasta: Boil the pasta according to the package directions until al dente. Drain and set aside.
  2. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt, pepper, paprika, and Italian seasoning. Cook for 5–7 minutes, stirring occasionally, until golden and cooked through. Remove from the skillet.
  3. Brown the sausage: Add the sliced sausage to the same skillet and cook for 2–3 minutes until lightly browned.
  4. Sauté the vegetables: Add the onion, bell pepper, broccoli, and mushrooms. Cook for 4–5 minutes until the vegetables are tender-crisp. Stir in the garlic and cook for another 30 seconds.
  5. Bring it together: Return the chicken to the skillet. Add the cooked pasta, chicken broth, and soy sauce. Toss everything together and cook for 2–3 minutes so the flavors combine.
  6. Finish: Stir in the butter and Parmesan until melted and creamy. Taste and adjust the seasoning.
  7. Serve: Garnish with fresh parsley and extra Parmesan. Serve hot.

Tip: For extra creaminess, add 1/3 cup heavy cream along with the chicken broth.
