Ingredients

  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • 2 cups beef broth
  • 8 ounces uncooked egg noodles
  • 1 cup cottage cheese
  • ¼ cup sour cream
  • 2 tablespoons cream cheese, softened
  • 2 tablespoons chopped fresh parsley, plus more for garnish

Instructions

  1. Heat the olive oil in a large deep skillet over medium-high heat. Add the ground beef and cook until browned, breaking it into crumbles. Drain excess grease if needed.
  2. Add the diced onion and sliced mushrooms. Cook for 5–6 minutes until softened. Stir in the garlic and cook for 30 seconds until fragrant.
  3. Mix in the Worcestershire sauce, Dijon mustard, paprika, onion powder, garlic powder, salt, and black pepper.
  4. Pour in the beef broth and bring to a gentle boil. Add the uncooked egg noodles, stir well, then reduce the heat to medium-low. Cover and simmer for 8–10 minutes, stirring occasionally, until the noodles are tender and most of the liquid has been absorbed.
  5. While the noodles cook, blend the cottage cheese, sour cream, and cream cheese until smooth and creamy.
  6. Remove the skillet from the heat. Let it cool for 2 minutes, then gently stir in the cottage cheese mixture until fully combined. This keeps the sauce silky and prevents curdling.
  7. Fold in the chopped parsley and adjust the seasoning with additional salt and pepper if needed.
  8. Garnish with extra parsley and serve hot with garlic bread, roasted vegetables, or a crisp green salad.
