Ingredients

  • 2 large cucumbers, thinly sliced
  • 3 cloves garlic, minced

  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar (or white vinegar)
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar (optional)
  • 1 teaspoon sesame seeds
  • 2 tablespoons chopped fresh cilantro or green onions (optional)

Instructions

  1. Wash the cucumbers thoroughly and slice them into thin rounds or bite-sized pieces.
  2. Place the cucumbers in a bowl and sprinkle with a pinch of salt. Let them sit for 10–15 minutes to release excess moisture, then drain and pat dry.
  3. In a separate bowl, whisk together the garlic, chili, soy sauce, vinegar, sesame oil, and sugar until well combined.
  4. Pour the dressing over the cucumbers and toss until every slice is evenly coated.
  5. Sprinkle with sesame seeds and chopped cilantro or green onions, if using.
