French Onion Mushroom Smothered Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 8 oz (225 g) mushrooms, sliced
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 can (10.5 oz) condensed French onion soup
  • 1 cup beef broth or chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 cup shredded mozzarella or Swiss cheese
  • 1 cup crispy fried onions

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken with salt, pepper, and garlic powder.
  3. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken for 3–4 minutes per side until golden. Transfer to a baking dish.
  4. In the same skillet, melt the butter. Cook the onions for 8–10 minutes until softened and lightly caramelized.
  5. Add the mushrooms and cook for 5 minutes, then stir in the garlic for 30 seconds.
  6. Pour in the French onion soup, broth, Worcestershire sauce, and thyme. Simmer for 5 minutes until slightly thickened.
  7. Pour the mushroom-onion sauce over the chicken.
  8. Sprinkle the cheese evenly over the top.
  9. Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  10. Sprinkle the crispy fried onions over the chicken and bake for an additional 5 minutes, until golden and crisp.
