Ingredients

  • 1 large broccoli, cut into florets
  • 1 tablespoon olive oil
  • 1 handful baby kale
  • 1 small onion, diced
  • 7 small garlic cloves, minced
  • 12 cherry or grape tomatoes, halved
  • 2 large eggs
  • 1/2 cup low-fat cottage cheese or plain Greek yogurt
  • 1/2 cup shredded low-fat mozzarella cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano or Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease a baking dish with olive oil.
  3. Blanch the broccoli florets in boiling water for 2–3 minutes, then drain well.
  4. Heat the olive oil in a skillet over medium heat. Sauté the onion until softened, then add the garlic and cook for 30 seconds.
  5. Stir in the baby kale and cherry tomatoes. Cook for 1–2 minutes, just until the kale begins to wilt.
  6. In a large bowl, whisk together the eggs, cottage cheese (or Greek yogurt), mozzarella, Parmesan, salt, pepper, paprika, and oregano.
  7. Fold the broccoli and sautéed vegetables into the egg mixture until evenly combined.
  8. Pour the mixture into the prepared baking dish and spread it evenly.
  9. Bake for 25–30 minutes, or until the casserole is set and the top is lightly golden.
  10. Let it rest for 5 minutes before serving.
