Oven-Baked 3-Ingredient Pork Chops with Pineapple

Ingredients

  • 4 bone-in or boneless pork chops (about 1 inch thick)
  • 1 (20-ounce) can pineapple slices, with the juice reserved
  • ½ cup barbecue sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch baking dish.
  3. Arrange the pork chops in a single layer in the baking dish.
  4. In a small bowl, stir together the barbecue sauce and ¼ cup of the reserved pineapple juice.
  5. Spoon the sauce evenly over the pork chops.
  6. Place one pineapple slice on top of each pork chop.
  7. Cover the baking dish with aluminum foil and bake for 30 minutes.
  8. Remove the foil and continue baking for 15–20 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
  9. For a caramelized finish, broil for 2–3 minutes at the end of cooking.
  10. Let the pork chops rest for 5 minutes before serving.
