Heavenly Comforting Soup
Ingredients
- 2 tbsp butter
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1 lb (450 g) boneless, skinless chicken breast or thighs, diced
- 6 cups chicken broth
- 2 medium potatoes, peeled and diced
- 1 tsp dried thyme
- 1 tsp dried parsley
- ½ tsp black pepper
- 1 tsp salt (or to taste)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 2 cups fresh spinach, chopped
- 1 tbsp cornstarch mixed with 2 tbsp cold water (optional, for a thicker soup)
Instructions
- Heat the butter and olive oil in a large pot over medium heat.
- Add the onion, carrots, and celery. Cook for 5–6 minutes until softened.
- Stir in the garlic and cook for 1 minute.
- Add the diced chicken and cook until lightly browned.
- Pour in the chicken broth, then add the potatoes, thyme, parsley, salt, and pepper.
- Bring to a boil, then reduce the heat and simmer for 20–25 minutes, or until the potatoes are tender and the chicken is fully cooked.
- Stir in the heavy cream and shredded cheddar cheese until melted and smooth.
- Add the spinach and cook for 2–3 minutes until wilted.
- If you’d like a thicker soup, stir in the cornstarch slurry and simmer for another 2–3 minutes.
- Taste and adjust the seasoning as needed.
