Garlic Chicken with Broccoli and Spinach
Ingredients
- 2 cups chicken breast, cut into bite-sized cubes
- 1 cup broccoli florets
- 1 cup fresh spinach leaves
- ¼ cup olive oil
- ½ cup chicken broth
- ¼ cup grated Parmesan cheese
- 1 tablespoon garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- Salt and black pepper, to taste
- 1 tablespoon butter (optional, for extra richness)
- Fresh parsley, chopped (for garnish)
Instructions
- Season the cubed chicken with Italian seasoning, paprika, salt, and black pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken and cook for 6–8 minutes, stirring occasionally, until golden brown and cooked through.
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- Add the broccoli florets and chicken broth. Cover and cook for 4–5 minutes, or until the broccoli is tender-crisp.
- Add the spinach and cook for 1–2 minutes, stirring until wilted.
- Stir in the butter (if using) and grated Parmesan cheese until the sauce is smooth and lightly creamy.
- Taste and adjust the seasoning if needed.
- Garnish with fresh parsley and serve immediately.
