Marry Me Chicken
Ingredients
For the Chicken:
- 6 chicken thighs
- Onion powder (to taste)
- Garlic powder (to taste)
- Cajun seasoning (to taste)
- Black pepper (to taste)
- Paprika (to taste)
- Italian herbs (to taste)
- 2 tablespoons olive oil
For the Sauce:
- 2 tablespoons butter
- 2 tablespoons fresh minced garlic
- ½ cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ teaspoon red pepper flakes (optional)
- ½ teaspoon Italian herbs
- ½ cup chopped sun-dried tomatoes
- Fresh parsley, chopped (for garnish)
Instructions
- Pat the chicken thighs dry and season both sides with onion powder, garlic powder, Cajun seasoning, black pepper, paprika, and Italian herbs.
- Heat the olive oil in a large skillet over medium-high heat. Sear the chicken for 5–6 minutes per side until golden brown. Remove from the skillet and set aside.
- In the same skillet, melt the butter and sauté the minced garlic for about 30 seconds until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the pan.
- Stir in the heavy cream, Parmesan cheese, Italian herbs, red pepper flakes (if using), and sun-dried tomatoes. Simmer for 3–5 minutes until the sauce thickens slightly.
- Return the chicken to the skillet, spoon the sauce over the top, and reduce the heat to low.
- Cover and cook for 10–15 minutes, or until the chicken reaches an internal temperature of 74°C (165°F).
- Garnish with fresh parsley and serve hot.
Serving Suggestions: This creamy chicken is delicious served with mashed potatoes, buttered pasta, rice, or crusty bread to soak up the rich sauce.
