Marry Me Chicken

Ingredients

For the Chicken:

  • 6 chicken thighs
  • Onion powder (to taste)
  • Garlic powder (to taste)
  • Cajun seasoning (to taste)
  • Black pepper (to taste)
  • Paprika (to taste)
  • Italian herbs (to taste)
  • 2 tablespoons olive oil

For the Sauce:

  • 2 tablespoons butter
  • 2 tablespoons fresh minced garlic
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ teaspoon red pepper flakes (optional)
  • ½ teaspoon Italian herbs
  • ½ cup chopped sun-dried tomatoes
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the chicken thighs dry and season both sides with onion powder, garlic powder, Cajun seasoning, black pepper, paprika, and Italian herbs.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken for 5–6 minutes per side until golden brown. Remove from the skillet and set aside.
  3. In the same skillet, melt the butter and sauté the minced garlic for about 30 seconds until fragrant.
  4. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan.
  5. Stir in the heavy cream, Parmesan cheese, Italian herbs, red pepper flakes (if using), and sun-dried tomatoes. Simmer for 3–5 minutes until the sauce thickens slightly.
  6. Return the chicken to the skillet, spoon the sauce over the top, and reduce the heat to low.
  7. Cover and cook for 10–15 minutes, or until the chicken reaches an internal temperature of 74°C (165°F).
  8. Garnish with fresh parsley and serve hot.

Serving Suggestions: This creamy chicken is delicious served with mashed potatoes, buttered pasta, rice, or crusty bread to soak up the rich sauce.
