Ingredients
For the Chicken
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and black pepper, to taste
For the Vegetables
- 1 lb (450 g) baby potatoes, halved 🥔
- 12 oz (340 g) fresh green beans, trimmed 🫛
- 1 tbsp olive oil
- 1 tsp garlic powder
- Salt and black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet or roasting pan with parchment paper.
- In a small bowl, mix the olive oil, garlic powder, oregano, thyme, paprika, salt, and pepper.
- Rub the seasoning mixture evenly over the chicken breasts.
- In a separate bowl, toss the potatoes with olive oil, garlic powder, salt, and pepper.
- Arrange the potatoes on one side of the baking sheet and roast for 15 minutes.
- Remove the pan from the oven and place the seasoned chicken in the center.
- Toss the green beans with a little olive oil, salt, and pepper, then add them to the remaining space on the pan.
- Return the pan to the oven and bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender.
- Let the chicken rest for 5 minutes before serving.
