Natural Morphine Lentil & Veggie Stew
A hearty, comforting lentil and vegetable stew packed with wholesome ingredients. The nickname “Natural Morphine” comes from its warm, soothing qualities that make it perfect for cozy meals.
Ingredients
- 1 cup dried brown or green lentils, rinsed
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 medium potato, diced
- 1 zucchini, chopped
- 1 can (14 oz / 400 g) diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon turmeric
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 2 cups fresh spinach or kale
- Juice of ½ lemon
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and cook for 5–6 minutes until softened.
- Stir in the garlic and cook for 1 minute until fragrant.
- Add the lentils, potato, zucchini, diced tomatoes, vegetable broth, cumin, paprika, turmeric, thyme, salt, and pepper.
- Bring to a boil, then reduce the heat and simmer for 30–35 minutes, or until the lentils are tender.
- Stir in the spinach or kale and cook for another 3–5 minutes until wilted.
- Add the lemon juice and adjust the seasoning if needed.
- Serve hot, garnished with fresh parsley.
Tips
- For extra protein, add chickpeas or white beans.
- For a spicy kick, add a pinch of red pepper flakes.
- This stew tastes even better the next day after the flavors have melded together.
