Skinny Mocha Cheesecake Bars

Coffee lovers, this one’s for you!  These Skinny Mocha Cheesecake Bars feature a rich chocolate crust, a creamy mocha cheesecake filling, and the perfect hint of coffee flavor. Lightened up with Greek yogurt, they’re a delicious way to satisfy your sweet tooth without feeling overly indulgent.

Ingredients

For the Chocolate Crust

  • 1 cup chocolate cookie crumbs
  • 2 tbsp melted butter
  • 1 tbsp unsweetened cocoa powder

For the Mocha Cheesecake Filling

  • 8 oz (225 g) reduced-fat cream cheese, softened
  • 1 cup plain Greek yogurt
  • 1/3 cup granulated sweetener or sugar
  • 1 large egg
  • 1 tbsp instant coffee granules
  • 1 tbsp hot water
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder
  • 1 oz (30 g) dark chocolate, melted

Optional Topping

  • Light whipped topping
  • Cocoa powder for dusting
  • Chocolate shavings

Instructions

  1. Preheat oven to 325°F (165°C). Line an 8-inch square baking pan with parchment paper.
  2. Mix the chocolate cookie crumbs, melted butter, and cocoa powder. Press firmly into the bottom of the prepared pan.
  3. Bake the crust for 8 minutes, then let it cool slightly.
  4. Dissolve the instant coffee in the hot water and allow it to cool.
  5. In a large bowl, beat the cream cheese until smooth.
  6. Add the Greek yogurt, sweetener, egg, vanilla extract, cocoa powder, melted chocolate, and dissolved coffee. Mix until creamy and well combined.
  7. Pour the filling over the crust and spread evenly.
  8. Bake for 25–30 minutes, or until the center is just set.
  9. Cool completely at room temperature, then refrigerate for at least 3 hours.
  10. Slice into bars and garnish with whipped topping, cocoa powder, or chocolate shavings if desired.
