Taco Pasta to Make at Night

A hearty, cheesy one-pot dinner that combines the bold flavors of tacos with comforting pasta. Perfect for busy weeknights!

Ingredients

  • 1 lb (450 g) ground beef or ground turkey
  • 1 packet (1 oz) taco seasoning
  • 8 oz (225 g) pasta (shells, rotini, or penne)
  • 2 cups beef or chicken broth
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • ½ cup sour cream
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

Optional Toppings

  • Chopped cilantro
  • Sliced green onions
  • Diced avocado
  • Jalapeño slices
  • Crushed tortilla chips

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat.
  2. Add onion and cook until softened, about 3 minutes. Stir in garlic and cook for 30 seconds.
  3. Add ground beef or turkey and cook until browned. Drain excess fat if needed.
  4. Stir in taco seasoning until the meat is evenly coated.
  5. Add pasta, broth, diced tomatoes with green chilies, and salsa. Stir well.
  6. Bring to a boil, then reduce heat to a simmer. Cover and cook for 12–15 minutes, stirring occasionally, until the pasta is tender.
  7. Remove from heat and stir in sour cream, cheddar cheese, and Monterey Jack cheese until melted and creamy.
  8. Let stand for 2–3 minutes before serving.
  9. Top with your favorite garnishes and enjoy!
