Slow Cooker Stuffed Shells

Ingredients

  • 20 jumbo pasta shells
  • 1 lb ground beef or Italian sausage
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups ricotta cheese
  • 1½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 egg
  • 2 cups marinara sauce
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta shells until slightly firm (al dente). Drain and let cool.
  2. In a skillet, cook the ground beef with onion until browned. Add garlic and cook for 1 minute. Drain excess grease.
  3. In a bowl, mix ricotta, 1 cup mozzarella, Parmesan, egg, Italian seasoning, salt, and pepper. Stir in the cooked meat mixture.
  4. Fill each pasta shell with the cheese and meat mixture.
  5. Spread a little marinara sauce on the bottom of the slow cooker. Arrange stuffed shells inside.
  6. Pour remaining sauce over the shells and top with the rest of the mozzarella cheese.
  7. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours until hot and bubbly.
  8. Garnish with parsley and serve warm.
