 Slow Cooker Beef & Potatoes

Tender chunks of beef, buttery potatoes, and rich savory gravy slow-cooked until everything melts in your mouth. This cozy one-pot meal is pure comfort food and perfect for busy days!

Ingredients:

  • 1½ lbs beef stew meat
  • 1 lb baby potatoes, halved
  • 1 onion, diced
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 2 tbsp cornstarch (optional, for thickening)

Instructions:

  1. Heat olive oil in a skillet and quickly brown the beef on all sides.
  2. Add potatoes and onions to the slow cooker.
  3. Place browned beef on top.
  4. In a bowl, mix beef broth, Worcestershire sauce, garlic, paprika, Italian seasoning, salt, and pepper.
  5. Pour mixture over the beef and potatoes.
  6. Cover and cook:
    • LOW for 7–8 hours
    • HIGH for 4–5 hours
  7. For a thicker gravy, mix cornstarch with 2 tbsp cold water and stir into the slow cooker during the last 20 minutes.
  8. Serve hot with crusty bread or a fresh salad.
