Cheesy Loaded Meatloaf Casserole

A hearty and comforting dinner made with juicy meatloaf, creamy mashed potatoes, melted cheddar cheese, and crispy bacon. Perfect for a cozy family meal.

Ingredients

For the Meatloaf Layer

  • 1½ lbs ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1 egg
  • ½ cup milk
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika

For the Mashed Potato Layer

  • 4 cups mashed potatoes
  • 2 tablespoons butter
  • ¼ cup milk or cream
  • Salt and pepper to taste

Toppings

  • 2 cups shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • Chopped parsley or green onions for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a casserole dish lightly with butter or cooking spray.
  2. In a large bowl, combine the ground beef, onion, garlic, breadcrumbs, egg, milk, ketchup, Worcestershire sauce, salt, pepper, and paprika. Mix until just combined.
  3. Press the meat mixture evenly into the prepared casserole dish.
  4. Bake for 25 minutes until the meat is mostly cooked through. Carefully drain excess grease if needed.
  5. While the meatloaf bakes, prepare the mashed potatoes by mixing the potatoes with butter, milk, salt, and pepper until creamy.
  6. Spread the mashed potatoes evenly over the baked meatloaf layer.
  7. Top with shredded cheddar cheese and crumbled bacon.
  8. Return the casserole to the oven and bake for another 15 minutes, or until the cheese is melted and bubbly.
  9. Garnish with parsley or green onions before serving.
