Ultimate Slow Cooker “Poor Man” Chicken & Onion (3 Ingredients)

Ingredients (3)
- 900 g – 1.2 kg (2–3 lb) chicken thighs or breasts
- 3–4 large onions, thinly sliced
- Salt and black pepper (counted as pantry staples)
Optional (if you have them): a splash of oil or a knob of butter for richer onions.
How to Make It
- Layer the onions in the bottom of the slow cooker. Season with a pinch of salt.
- Place chicken on top. Season generously with salt and pepper.
- Cover and cook
- LOW: 6–8 hours, or
- HIGH: 3–4 hours
- Don’t add water. The onions and chicken release enough juices to create a natural broth.
- When done, stir gently so the onions coat the chicken in that silky sauce.
