No-Bake Coconut Rolls with Peanut Butter Swirl

No-Bake Coconut Rolls with Peanut Butter Swirl

An easy, no-oven dessert made with coconut and a creamy peanut butter filling. Soft, sweet, and sliced into beautiful spirals just like the photo.

 Ingredients

For the coconut dough

  • 2 cups finely shredded coconut
  • 1 cup sweetened condensed milk
  • 1 tablespoon melted butter
  • 1 teaspoon vanilla extract

For the filling

  • 4 tablespoons peanut butter
  • 2 tablespoons honey or powdered sugar (to taste)

 Instructions

  1. In a bowl, mix the shredded coconut, condensed milk, melted butter, and vanilla.
  2. Knead with your hands until a soft, moldable dough forms.
  3. Place the dough on plastic wrap and roll it into a thin rectangle.
  4. Mix the peanut butter with honey (or powdered sugar), then spread it evenly over the surface.
  5. Using the plastic wrap, roll the dough tightly into a log.
  6. Freeze for 30–40 minutes until firm.
  7. Slice into rounds to reveal the spiral pattern.

 Tips

  • If the dough is too dry, add a little more condensed milk.
  • If it’s too sticky, add a bit more coconut.
  • Chilling well makes clean slices.

 Storage

Store in an airtight container in the fridge for up to 5 days, or freeze for longer storage.
