This “no peek” chicken and rice is pure comfort food: tender chicken, perfectly cooked rice, and a rich, savory flavor that feels like a warm hug at the end of the day.  Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice (uncooked)
  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 packet onion soup mix
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 cup frozen mixed vegetables (optional)
  • Fresh parsley for garnish (optional)

 Instructions:

  1. Prepare the base:
    In your slow cooker, combine the uncooked rice, chicken broth, cream of chicken soup, onion soup mix, garlic powder, and black pepper. Stir well until everything is evenly mixed.
  2. Add the chicken:
    Place the chicken breasts directly on top of the rice mixture. Do not stir.
  3. Add veggies (optional):
    Sprinkle frozen vegetables over the top if using.
  4. Cook (no peeking!):
    Cover and cook on low for 4–5 hours or high for 2.5–3 hours. Keep the lid closed—this helps the rice cook perfectly.
  5. Finish and serve:
    Once done, fluff the rice gently and serve the chicken over it. Garnish with fresh parsley if desired.

  • Don’t lift the lid while cooking—it releases steam and can affect the rice texture.
  • You can swap chicken breasts for thighs for extra juiciness.
