Zesty Cottage Cheese and Avocado Breakfast Burrito Bliss

I never thought a morning burrito could fuel my busy day—until I wrapped creamy cottage cheese and avocado in a warm tortilla and discovered true breakfast bliss.

Ingredients

  • 2 large whole-wheat tortillas
  • ½ cup cottage cheese
  • 1 ripe avocado, sliced
  • 2 large eggs, scrambled
  • 1/4 cup diced tomato
  • 2 tablespoons chopped cilantro
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Prepare the eggs
    Heat a non-stick pan over medium heat and lightly coat with cooking spray. Add the eggs, season with salt and pepper, and scramble until fully cooked. Set aside.
  2. Warm the tortillas
    Heat the tortillas in a pan or microwave for a few seconds until soft and pliable.
  3. Assemble the burritos
    Spread cottage cheese evenly over each tortilla. Add scrambled eggs, sliced avocado, diced tomato, and chopped cilantro.
  4. Wrap it up
    Fold in the sides of each tortilla, then roll tightly into a burrito.
  5. Serve and enjoy
    Serve immediately while warm. Optional: lightly toast the wrapped burrito in a pan for a crispy finish.

Tips

  • Add a squeeze of lime juice for extra zest.
  • Sprinkle chili flakes or hot sauce if you like a little heat.
  • You can add cooked chicken or turkey for more protein.
