Crockpot Sausage & Potatoes (Easy Slow Cooker Recipe)
Ingredients
- 1.5 lbs smoked sausage (like kielbasa), sliced into ½-inch rounds
- 700 g baby potatoes, halved (or quartered if large)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup chicken broth
Instructions
- Prep the ingredients: Wash and halve the baby potatoes. Slice the sausage and chop the onions, garlic, and peppers.
- Season the potatoes: In a bowl, toss the potatoes with olive oil, paprika, salt, pepper, and Italian seasoning.
- Layer in the crockpot: Place the seasoned potatoes at the bottom. Add the onion, garlic, and bell peppers. Top with the sausage slices.
- Add broth: Pour the chicken broth over everything.
- Cook:
- Low: 4 hours
- High: 2 hours
Stir halfway if you can, and check that the potatoes are fork-tender when done.
- Serve warm: Garnish with parsley if you like and enjoy straight from the crockpot.

- You can add onions and peppers for extra flavor — they soften beautifully.
- For a creamier version, some people mix in cream soup or broth before cooking.
