Crispy Air Fryer Chicken & Cottage Cheese Taquitos

Ingredients
- 2 cups shredded cooked chicken
- 1 cup cottage cheese (room temperature)
- ½ cup shredded cheddar cheese
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- Salt and black pepper (to taste)
- 8 small flour tortillas
- Olive oil spray
Instructions
- Make the filling:
In a large bowl, mix the shredded chicken, cottage cheese, cheddar cheese, smoked paprika, garlic powder, salt, and pepper until well combined. - Warm the tortillas:
Heat the tortillas slightly (microwave for 20–30 seconds or warm in a pan) so they become soft and easy to roll. - Assemble the taquitos:
Spoon about 2–3 tablespoons of filling onto each tortilla. Roll them tightly and place seam-side down. - Prepare for air frying:
Lightly spray the taquitos with olive oil to help them crisp up. - Air fry:
Place them in the air fryer in a single layer. Cook at 190°C (375°F) for 8–10 minutes, or until golden brown and crispy. - Serve:
Let them cool slightly, then serve warm with your favorite dips like salsa, guacamole, or yogurt sauce.
Tips
- Don’t overfill the tortillas to prevent them from opening.
- For extra crispiness, flip them halfway through cooking.
- You can use corn tortillas for a more traditional texture (just warm them well to avoid cracking).
