Crispy Air Fryer Chicken & Cottage Cheese Taquitos

 Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup cottage cheese (room temperature)
  • ½ cup shredded cheddar cheese
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and black pepper (to taste)
  • 8 small flour tortillas
  • Olive oil spray

 Instructions

  1. Make the filling:
    In a large bowl, mix the shredded chicken, cottage cheese, cheddar cheese, smoked paprika, garlic powder, salt, and pepper until well combined.
  2. Warm the tortillas:
    Heat the tortillas slightly (microwave for 20–30 seconds or warm in a pan) so they become soft and easy to roll.
  3. Assemble the taquitos:
    Spoon about 2–3 tablespoons of filling onto each tortilla. Roll them tightly and place seam-side down.
  4. Prepare for air frying:
    Lightly spray the taquitos with olive oil to help them crisp up.
  5. Air fry:
    Place them in the air fryer in a single layer. Cook at 190°C (375°F) for 8–10 minutes, or until golden brown and crispy.
  6. Serve:
    Let them cool slightly, then serve warm with your favorite dips like salsa, guacamole, or yogurt sauce.

 Tips

  • Don’t overfill the tortillas to prevent them from opening.
  • For extra crispiness, flip them halfway through cooking.
  • You can use corn tortillas for a more traditional texture (just warm them well to avoid cracking).
