Mini BBQ Meatloaf Bites
Servings: 12 (1 muffin tray)
Ingredients:
- 500 g (1 lb) ground beef
- 1 small onion, finely chopped
- 1 egg
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
For the glaze:
- 1/3 cup BBQ sauce
- 2 tbsp ketchup
- 1 tbsp brown sugar (optional, for sweetness)
Instructions:
- Preheat oven to 180°C (350°F). Lightly grease a muffin tin.
- Mix the meat: In a bowl, combine ground beef, onion, egg, breadcrumbs, milk, and spices. Mix until just combined (don’t overmix).
- Shape: Divide the mixture into equal portions and press into each muffin cup.
- Add glaze: Mix the BBQ sauce, ketchup, and brown sugar. Spoon or brush it on top of each meat portion (just like in the image).
- Bake: Cook for 20–25 minutes until fully cooked through.
- Serve: Let them rest a few minutes, then remove and serve warm.
Tips:
- You can swap beef with chicken or turkey.
- Add cheese in the center for a stuffed version.
- Serve with mashed potatoes, rice, or salad.
