Spinach & Cheese Quiche Crustless
Ingredients:
- 6 large eggs
- 1 cup milk or heavy cream
- 2 cups fresh spinach (chopped)
- 1 cup shredded cheese (mozzarella, cheddar, or mix)
- 1/2 cup crumbled feta cheese (optional)
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 tbsp olive oil
- Salt and black pepper (to taste)
Instructions:
- Preheat oven to 180°C (350°F).
- Heat olive oil in a pan, sauté onion and garlic until soft.
- Add spinach and cook until wilted. Let cool slightly.
- In a bowl, whisk eggs with milk, salt, and pepper.
- Stir in cooked spinach mixture and cheeses.
- Pour into a greased baking dish or pie pan.
- Bake for 30–40 minutes until set and golden on top.
- Let it cool for a few minutes, slice, and serve.
Tips:
- You can add mushrooms, chicken, or herbs for extra flavor.
- For a low-carb version, keep it crustless .
