Spinach & Cheese Quiche Crustless

 Ingredients:

  • 6 large eggs
  • 1 cup milk or heavy cream
  • 2 cups fresh spinach (chopped)
  • 1 cup shredded cheese (mozzarella, cheddar, or mix)
  • 1/2 cup crumbled feta cheese (optional)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tbsp olive oil
  • Salt and black pepper (to taste)

 Instructions:

  1. Preheat oven to 180°C (350°F).
  2. Heat olive oil in a pan, sauté onion and garlic until soft.
  3. Add spinach and cook until wilted. Let cool slightly.
  4. In a bowl, whisk eggs with milk, salt, and pepper.
  5. Stir in cooked spinach mixture and cheeses.
  6. Pour into a greased baking dish or pie pan.
  7. Bake for 30–40 minutes until set and golden on top.
  8. Let it cool for a few minutes, slice, and serve.

 Tips:

  • You can add mushrooms, chicken, or herbs for extra flavor.
  • For a low-carb version, keep it crustless .
