 Heavenly Comforting Soup Chicken & Veggie Style

 Ingredients

  • 2 cups cooked chicken (shredded or diced)
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 potato, diced (for thickness)
  • 6 cups chicken broth
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp dried thyme or mixed herbs
  • ½ cup cream (optional, for creamy version)
  • Fresh parsley (for garnish)

 Instructions

  1. Sauté the base
    Heat olive oil in a pot. Add onion and cook 5–6 minutes until soft. Add garlic and cook 30 seconds.
  2. Add vegetables
    Stir in carrots, celery, and potato. Cook for 3–4 minutes.
  3. Simmer
    Pour in chicken broth and bring to a boil. Reduce heat and simmer 20–25 minutes until vegetables are tender.
  4. Add chicken & seasoning
    Add shredded chicken, salt, pepper, and herbs. Simmer another 10 minutes.
  5. Make it creamy (optional)
    Stir in cream and heat gently (don’t boil).
  6. Serve
    Garnish with parsley and enjoy warm

 Tips

  • You can blend part of the soup for a thicker texture (common in creamy soups)
  • Add rice, noodles, or chickpeas to make it more filling
  • Tastes even better the next day like most soups!
