Zero Carb Fluffy Bread

 Ingredients

  • 4 large eggs
  • 1 cup Greek yogurt (full-fat, unsweetened)
  • 1 to 1½ cups almond flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tbsp apple cider vinegar (optional but helps fluffiness)

Some versions also add psyllium husk for better texture.

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Line a loaf pan with parchment paper.
  3. In a bowl, mix:
    • Almond flour
    • Baking powder
    • Salt
  4. In another bowl, whisk:
    • Eggs
    • Greek yogurt
    • Apple cider vinegar
  5. Combine wet + dry ingredients and mix until smooth.
  6. Pour batter into the loaf pan.
  7. Bake for 30–40 minutes until golden and firm.
  8. Let it cool before slicing

 Tips

  • Use full-fat yogurt for better softness.
  • Don’t skip cooling — it helps the bread hold together.
  • You can add:
    • Cheese
    • Cinnamon + sweetener
