Zero Carb Fluffy Bread
Ingredients
- 4 large eggs
- 1 cup Greek yogurt (full-fat, unsweetened)
- 1 to 1½ cups almond flour
- 1 tsp baking powder
- ¼ tsp salt
- 1 tbsp apple cider vinegar (optional but helps fluffiness)
Some versions also add psyllium husk for better texture.
Instructions
- Preheat oven to 180°C (350°F).
- Line a loaf pan with parchment paper.
- In a bowl, mix:
- Almond flour
- Baking powder
- Salt
- In another bowl, whisk:
- Eggs
- Greek yogurt
- Apple cider vinegar
- Combine wet + dry ingredients and mix until smooth.
- Pour batter into the loaf pan.
- Bake for 30–40 minutes until golden and firm.
- Let it cool before slicing
Tips
- Use full-fat yogurt for better softness.
- Don’t skip cooling — it helps the bread hold together.
