Southern-Style Potato Salad
Ingredients
- 1.5 kg (about 3 lbs) potatoes (russet or Yukon Gold), peeled & cubed
- 4–5 hard-boiled eggs, chopped
- 1 cup mayonnaise
- 2–3 tbsp yellow mustard
- 2 tbsp apple cider vinegar
- 3 tbsp sweet pickle relish
- 2 celery stalks, finely chopped
- ½ small onion, finely chopped
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt & black pepper to taste
- Paprika (for garnish)
These ingredients are typical of Southern-style recipes, which combine mayo + mustard + eggs + relish for that signature flavor
Instructions
- Cook the potatoes
- Put potatoes in a large pot, cover with salted water.
- Boil 15–20 minutes until fork-tender, then drain.
- Cool & season
- While still warm, toss potatoes with vinegar and mustard.
- Let them cool completely.
- Prepare the mix
- In a bowl, combine mayonnaise, relish, garlic powder, onion powder, salt, and pepper.
- Combine everything
- Add potatoes, eggs, celery, and onion.
- Mix gently until creamy and well coated.
- Chill & serve
- Sprinkle paprika on top.
- Refrigerate at least 30 minutes before serving.
Tips for best results
- Slightly mash some potatoes for a creamier texture
- Chill longer (1–2 hours) for better flavor
- Mustard is key for that authentic Southern taste
