Mounds Brownies – Ultimate Chocolate Coconut Bars
Rich, fudgy brownies topped with a sweet coconut layer and finished with smooth chocolate frosting — inspired by the classic Mounds candy bar!
Ingredients
For the Brownie Base
- 1 box brownie mix (9×13 size) plus ingredients called for on box (eggs, oil, water)
For the Coconut Layer
- 5 cups shredded coconut
- 1 can (14 oz) sweetened condensed milk
- 1 cup powdered sugar (Optional: ½ tsp vanilla or coconut extract)
For the Chocolate Topping
- 1 container (16 oz) chocolate frosting
- 1–2 tbsp milk or heavy cream (to thin frosting if needed)
Instructions
- Bake the Brownies
Prepare and bake the brownie mix in a greased 9×13 pan according to box directions — bake until a toothpick comes out with moist crumbs. - Make the Coconut Layer
In a bowl, mix shredded coconut, sweetened condensed milk, and powdered sugar until you have a sticky, cohesive mixture. - Apply the Coconut
As soon as the brownies come out of the oven while still hot, spread the coconut mixture evenly over the entire surface. - Prepare the Chocolate Topping
Heat the chocolate frosting in a microwave-safe bowl for 20–30 sec until pourable (add a splash of milk or cream if needed). - Finish & Set
Pour the warm chocolate over the coconut layer, spreading to cover completely. Allow to cool, then refrigerate for ~1–2 hours to set. - Cut & Serve
Slice into bars and enjoy! For cleaner cuts, warm your knife under hot water and dry between slices.
TIPS
- Apply the coconut while the brownies are hot — the heat helps the layer stick and not slide.
- Using sweetened shredded coconut gives the best classic Mounds-bar flavor.
- Refrigerate fully before slicing for tidy layers.
