Crunchy Cucumber with Chili and Herbs

 Ingredients:

  • 3 large cucumbers, sliced or cut into bite-sized pieces
  • 2 garlic cloves, minced
  • 1 teaspoon chili flakes (adjust to taste)
  • 2 tablespoons vinegar (white or rice vinegar)
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 2 tablespoons olive oil (or any neutral oil)
  • Salt, to taste
  • A handful of fresh cilantro or parsley, chopped
  • Sesame seeds (optional)

 Instructions:

  1. Prepare the cucumbers
    Place the sliced cucumbers in a colander, sprinkle with a little salt, and let them sit for about 10 minutes to release excess water. Pat them dry.
  2. Make the dressing
    In a small bowl, mix together: garlic, chili flakes, soy sauce, vinegar, sugar, and oil. Stir well until the sugar dissolves.
  3. Combine
    Add the cucumbers to a bowl and pour the dressing over them. Toss well to coat.
  4. Add finishing touches
    Sprinkle chopped herbs and sesame seeds on top.
  5. Chill (optional but recommended)
    Refrigerate for 15–30 minutes to let the flavors blend.

 Tips:

  • Add a squeeze of lemon juice for extra freshness
  • A drizzle of sesame oil gives a deeper flavor
  • Best served cold as a refreshing side dish or light snack
