Banana Chocolate Chip Cottage Cheese Breakfast Cake Squares

These soft, moist breakfast squares are packed with sweet banana flavor, melty chocolate chips, and a creamy richness from cottage cheese. Perfect for meal prep, they stay tender for days and make mornings feel extra cozy.

Ingredients

  • 1 cup cottage cheese
  • 2 ripe bananas, mashed
  • 2 large eggs
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (or oat flour for a healthier option)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
    Line an 8×8-inch baking pan with parchment paper.
  2. Mix wet ingredients
    In a large bowl, mash the bananas until smooth.
    Add cottage cheese, eggs, maple syrup, and vanilla extract.
    Mix until well combined (a few small curds are fine).
  3. Combine dry ingredients
    In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Make the batter
    Add the dry ingredients to the wet mixture and stir until just combined.
    Fold in the chocolate chips.
  5. Bake
    Pour the batter into the prepared pan and spread evenly.
    Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool & slice
    Let the cake cool completely before slicing into squares.

Tips

  • For extra sweetness, sprinkle a few chocolate chips on top before baking.
  • Store in the fridge for up to 4–5 days.
  • These also freeze well—just thaw overnight.
