Banana Chocolate Chip Cottage Cheese Breakfast Cake Squares
These soft, moist breakfast squares are packed with sweet banana flavor, melty chocolate chips, and a creamy richness from cottage cheese. Perfect for meal prep, they stay tender for days and make mornings feel extra cozy.
Ingredients
- 1 cup cottage cheese
- 2 ripe bananas, mashed
- 2 large eggs
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour (or oat flour for a healthier option)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C).
Line an 8×8-inch baking pan with parchment paper. - Mix wet ingredients
In a large bowl, mash the bananas until smooth.
Add cottage cheese, eggs, maple syrup, and vanilla extract.
Mix until well combined (a few small curds are fine). - Combine dry ingredients
In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. - Make the batter
Add the dry ingredients to the wet mixture and stir until just combined.
Fold in the chocolate chips. - Bake
Pour the batter into the prepared pan and spread evenly.
Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. - Cool & slice
Let the cake cool completely before slicing into squares.
