Meatloaf Cupcakes with Whipped Potato Topping

 Ingredients

For the Meatloaf:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup ketchup
  • 1/4 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

For the Topping:

  • 2 cups mashed potatoes, whipped until smooth and creamy

 Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a muffin tin or line it with paper liners.
  2. Prepare the meat mixture
    In a large bowl, combine the ground beef, breadcrumbs, egg, ketchup, milk, garlic powder, onion powder, salt, and pepper. Mix until just combined (do not overmix).
  3. Form the cupcakes
    Divide the mixture evenly and press it into the muffin tin cups, filling each about 3/4 full.
  4. Bake
    Place in the oven and bake for 20–25 minutes, or until the meat is fully cooked through.
  5. Prepare the topping
    While the meatloaf is baking, make sure your mashed potatoes are smooth and fluffy. You can add a little butter or milk for extra creaminess if desired.
  6. Assemble
    Remove the meatloaf cupcakes from the oven and let them cool slightly. Pipe or spoon the whipped mashed potatoes on top like frosting.
  7. Optional finishing touch
    Add a drizzle of ketchup or gravy on top for extra flavor.

 Tips

  • Use a piping bag for a красив “cupcake” look.
  • Sprinkle chopped parsley or shredded cheese on top for garnish.
